Chicken kontosouvli with gluten free pitta bread

For the pitta breads:
  • 300gr gluten free all-purpose flour (sifted)
  • 2ts salt
  • sachet of active dry yeast
  • 4ts sugar
  • 4tbs oil
  • 250 gr warm water
  • 10 sticks thyme…
Dissolve the yeast and the sugar in water and let set for 15 minutes to prove.
Add salt, oil and mix. At the end, stir in the gluten free flour and the thyme flowers…
